Since 1900, this family-owned brewery have made naturally-fermented Lambic, Gueuze, Faro and fruity Kriek beers. See the original copper barrels and taste the lip-smacking authentic beers. What you see on your visit depends on when you come, since it is a working brewery. In summer you might catch them making fruit beers. Lambic beer is produced by spontaneous fermentation by wild yeast in the air. Gueuze is a mix of Lambic beers that have had a champagne-style second fermentation in the bottle. Kriek is a Lambic beer that has had a second fermentation after the addition of sour cherries. Sour Lambic beers are an acquired taste, although every brand has its own unique flavour. Since 1999 the Cantillon Brewery has used only organic cereals in their production.
